Macaroni and cheese is a classic winter comfort food.

It's warm, cheesy and always a crowd pleaser. There are hundreds of variations, some laced with meat or seafood and others topped with a sprinkling of breadcrumbs.

The types of cheeses can vary from a sharp cheddar to a creamy American. There's also room to play around with different types of pasta, from classic elbows to cavatelli, ditalini or rotini.

We pulled seven recipes from the PennLive archives, everything from classic mac n' cheese to a buffalo chicken and a slow cooker recipe.

Buffalo Chicken Macaroni Cheese

1/2 stick plus 2 tablespoons unsalted butter

4 cups shredded/pulled rotisserie chicken or turkey breast

1 to 2 cups Buffalo wing sauce such as Frank's RedHot. (If the heat factor worries you, just add half the amount)

1 cup low fat half and half

2 1/2 cups yellow wholesale authentic jerseys sharp cheddar cheese, shredded

1 cup pepper jack cheese, shredded

2 cups ranch dressing

1/2 cup blue cheese dressing (optional)

Salt and pepper, to taste

Garlic salt, to taste2 cups whole wheat Ritz crackers, smashed, or

1 cup seasoned panko breadcrumbs

1/2 cup crumbled blue cheese (optional)

2 tablespoons fresh parsley, chopped (optional)

Preheat the oven to 350 Fahrenheit and spray a 9 by 13 inch baking dish with cooking spray. Bring a large pot of salted water to a boil; add the pasta Cheap China Jerseys and cook until al dente, about 7 minutes. Drain. Melt 2 tablespoons unsalted butter in microwave with scallions and celery. Pour that and all other ingredients in large bowl to mix (except cracker crumbs, and reserve 1 cup shredded sharp cheddar cheese).

Melt 1/2 stick butter in microwave and reserve to pour over cracker or panko crumbs Pour chicken mac combo in prepared baking dish. Top with the reserved 1 cup sharp cheddar cheese. Bake covered about 30 minutes until bubbly. Take out of oven, top with cracker crumbs and butter. Bake about 10 minutes, uncovered. Let rest 10 minutes before serving.

Old Fashioned Macaroni and Cheese

Cook macaroni as directed on package. Shred cheese.

While macaroni is cooking, make a thin white sauce. Melt 2 tablespoons butter in a heavy bottom saucepan over low heat. Using a whisk, blend in flour and pepper and cook until mixture is smooth and bubbly. Remove from heat. Slowly whisk in milk. Return to stovetop and heat to boiling, stirring constantly. Boil and stir 1 minute.
